My Summer Garden

Last time we spoke I boldly proclaimed that this year I would finally give my little garden the attention it deserves. It has served us well in years past providing yard snacks of sugar snap peas, wild strawberries and raspberries. But this year I wanted to be able to cook a few dinners solely using the harvest from the garden.

In spite of me the garden flourished. By April I was giddy with the thought of spending extended periods of time outside again. Evening dinners by the garden seemed an impossible act when as the rains persisted. I started seeds on the ledge above our sink and watched their steady progress. For hours, I dug deep into the dirt extending the garden’s borders making room for squash, peppers, tomatoes, beans, zucchini, potatoes, lettuce, carrots, radish, and cucumbers. Hopes were high.

And then reality hit. Summer with three kids, camping trips, beach picnics, book writing and opening a retail/studio in Seattle leaves little time for pulling weeds. And yet the garden gives and rewards my efforts – no matter how lacking they may be.

Last week, after a quick jaunt to the islands, I came home to an empty fridge and a deep desire to order take out. I wandered into the garden to turn on the sprinkler but immediately found myself pulling weeds and making plans for dinner. There was a zucchini – a rare one not yet enjoyed by our squirrely garden guests, tender skinned potatoes, ruffled butter lettuce, green beans and plenty of fragrant herbs.

The potatoes I boiled in a vinegar brine then roasted until crisp on the outside and buttery inside. With the zucchini, I cut it into thick coins then fried in a bit of olive and finished with sumac – a brilliant red spice that tastes as if it’s laced with lemon – and mint. The greens were lightly dressed with a lemon yogurt dressing immersed with herbs. And the green beans, well, the kids ate those raw as a snack while they waited for their garden dinner.

Perhaps next year is the year I really dig deep into gardening and I can live out my dreams of weedless rows and towering teepees of greens beans. In the meantime, I’m thankful for tangled stems that produce tomatoes sweet and bursting with flavor, and jungle-like web of green beans that bring smiles to my kid’s faces, and potatoes springing from the dirt in which I proudly hold them high in the air and proclaim to my husband, I grew that! Really, the earth does the work and for that I am so grateful.

Garlic Scapes!

Know Your Produce: Garlic scapes

Garlic scapes are the beginning of what would be the garlic plant’s flower; if they’re left on the garlic plant, less energy goes towards developing the head of garlic underground. So, by harvesting these scapes, you cooks get an early taste of the garlic to come down the road, and the bulbs can keep developing.

You can use scapes just like you would garlic; their flavor is milder, so you get the nice garlic taste without some of the bite. Use them on top of pizza, in pasta, and as a replacement for garlic in most other recipes.

Store: Store garlic scapes in a plastic bag in the crisper section of your refrigerator. Store away from your fruit, because garlic is generous with its fragrance, and you may not appreciate biting into a peach and tasting…garlic. Garlic scapes will keep up to two weeks if kept in an airtight container. They freeze well, too–blanched or not–but they tend to lose some of the garlicky heat during storage. You can remove the stalk tip above the pod before using; some people use the whole scape, but the pod and tip are more fibrous than the tender stalk.

Prep: Wash under cool water when ready to use. Whether you’re sautéing, pureeing, or dicing them, garlic scapes are a great addition to many different meals. Great in multiple forms, this ingredient gives many recipes an extra dash of flavor that will compliment a variety of summer dishes like mashed potatoes, stir fry, omelets, pesto, or pasta.

Use: Garlic scapes can be used almost anywhere garlic is; however, keep in mind it is milder in flavor, so you can use more of it per recipe. Scapes tend to get tough and/or lose flavor if overcooked, so start simple. To learn how much cooking is enough and how much is too much, cut scapes to desired lengths and sauté in a little olive oil over medium heat, adding salt and pepper to taste. The end result should be a side dish that is elegant and tasty.

Begin, Again

I recently came across something that I wrote on the first day on 2014. That day didn’t set off to a great start. My oldest, Baron, ended up in an emergency walk-in clinic with an earache that was causing him to shriek in pain. I wrote of the events of the day and how I started to see them as a bad omen for the year. “If this is how the first day of the year started then what’s the rest going to be?” I asked myself.

Thankfully, I quickly stopped that train of thought and realized that, first of all, aches and pains are a part of life and often a reminder of how grateful I am to have most of our days filled with healthy bodies and, secondly, as much as I love a clean start, I don’t need the calendar to tell me when to start. I can simply begin again and again and again.

The same can be said for making and then subsequently breaking resolutions. I’ve made them in the past then broke them shortly after and allowed the guilt I felt from not living those resolutions to hide the fact that each day is a day to start fresh – each hour even. There then is no pressure to hide from failed resolutions because each slip up is simply an opportunity to begin, again. There’s great freedom in that.

When the need arises to begin again, I’d love to suggest you do so with this simple carrot salad. Shredded carrots are dressed with olive oil, lemon juice, garlic and a few warming spices that hint towards winter because we need whatever we can to feel the warmth in these months. There’s also a bit of red chile which really warms; the amount is really up to you. It’s a welcomed bit of freshness in the season of long-simmered stews, cream-filled braises, and cupsful of hot chocolate. None of which are bad things, mind you.

While I’m not one for resolutions, I’m okay with seeking more grace in 2015 – for ourselves, for each other, and for the freedom to see each day as a new beginning. May that resolve guide us to more health, joy, and love in the coming year.

Fresh Carrot Salad                        

This recipe comes from my brand new cookbook, Date Night In, which was the work of resolving to spend more time dating my husband in the comfort of our home. know picnics and winter aren’t synonymous, but I do tend to think of picnicking when I eat this salad. I’m particularly fond of the gentle wisp of cinnamon in the salad that’s warming without making the carrots taste too sweet. Add more jalapeño if you like heat.

Ingredients:

2 tablespoons extra-virgin olive oil

2 tablespoons freshly squeezed lemon juice

1 garlic clove, minced

3⁄4 teaspoon ground coriander

1⁄8 teaspoon ground cinnamon

1⁄2 teaspoon sweet paprika (smoked or regular)

1⁄2 fresh red jalapeño pepper, seeded and very thinly sliced

1⁄2 teaspoon kosher salt

8 ounces / 230 g carrots, grated (2 to 21⁄2 cups)

1⁄2 cup / 15 g chopped fresh cilantro

 

Directions:

Whisk together the olive oil, lemon juice, garlic, coriander, cinnamon, paprika, red jalapeño, and salt. Toss the dressing with grated carrots and cilantro.

This salad can be made 1 day in advance; I’d advise adding the cilantro just before serving to keep it fresh looking.

Grilled Green Beans and Peaches

Serves 4

Ingredients

2 peaches, cut into ½ inch wedges

1 lb. green beans, trimmed

2 tablespoons olive oil

Kosher salt and freshly ground pepper, to taste

2 tablespoons slivered almonds

1 tablespoon sherry vinegar

Directions

Toss peaches and trimmed green beans with the olive oil; season with kosher salt and freshly ground black pepper.

Cook in a grill pan or in a skillet over high heat, tossing often, until beans are crisp-tender and peaches are lightly charred, 8–10 minutes.

Toss with toasted slivered almonds and Sherry vinegar. Serve and enjoy!

Mango & Avocado Salad

Ingredients

1 ripe mango, peeled, pitted and cut into 3/4″ spears

1 ripe avocado, peeled, pitted, and also cut into 3/4″ spears

3 or 4 big handfuls of leaf lettuce

1 shallot, minced

1 tablespoon lime zest

2 tablespoons lime juice

4 tablespoon olive oil

2 tablespoons yogurt

1/2 teaspoon salt

1/2  teaspoon ground cayenne

1 or 2 turns of pepper

Directions

Place the greens in a serving bowl.

Whisk together the shallot, lime juice and zest, and olive oil.

Once the dressing is emulsified, whisk in the yogurt, cayenne, and salt.

Pour half the dressing over the greens and mix with your hands.

Arrange the mango and avocado in an alternating circle on top, and drizzle with the remaining dressing.

Finish with a turn or two of pepper and serve.

Serve up, and enjoy!

Lazy Summer Lasagna

Ingredients

  • Fresh pasta sheets, cut into eight 5” squares (note: you can use store-bought lasagna, cooked, cooled slightly, and cut into 5” lengths)
  • 2 T olive oil
  • 2 garlic cloves, minced
  • 1/2 medium onion, chopped
  • 1 small zucchini, sliced thin
  • 1 small yellow squash (or more zucchini), sliced thin
  • 2 cup fresh whole-milk ricotta
  • 3 tablespoons chopped, summer savory (or oregano)
  • 2 tablespoons chopped, basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tomato, sliced thin

Directions

  • Bring a large pot of salted water to a boil. Cook pasta sheets, two at the time (to prevent sticking), 3-5 minutes until al dente. Transfer, with tongs, to a plate.
  • In a sauté pan, add oil over medium-high heat. Stir in garlic and onions, and cook 5-7 minutes until golden brown, stirring frequently to prevent them from burning. Transfer garlic and onion to a medium bowl, and set aside. In the same sauté pan, add zucchini and summer squash, and cook 6-8 minutes, stirring, until translucent.
  • Add ricotta, summer savory, basil, salt and pepper to the bowl with garlic and onion. Stir well and season to taste.
  • To assemble, place one pasta sheet on a plate. Spread with ricotta-herb mixture. Top with zucchini, summer squash and tomato slices. Finish with an additional pasta sheet, if desired. Season to taste with additional herbs, salt and pepper. Repeat to make a total of four lasagnas.

Pancakes

The other day, I set out to make pancakes and scrambled eggs for the family.  Most of the clan was home, maybe 9 out of 11! So I went to allrecipes.com and found the perfect recipe (you know, the one with 4000 reviews and a 4+ rating), read a few comments to see if there were any important changes recommended and then went for it.

I don’t know how my wife does it. Trying to get that first batch of pancakes not too runny or too thick. Do I double, triple or quadruple it? Let’s triple it. Get out the mixing bowls, one for dry and one for wet ingredients. Oops, I picked out a mixing bowl that was too small for the tripled recipe. But instead of washing another dish, I prudently chose to mix carefully!

Before I headed out to feed the horses around 5am, I checked the quantity of milk in the fridge – “A half gallon, we’re good.” Came back in and started to pull it all together. Got all the dry ingredients together, started on the eggs, oil and milk. Oh no! Between my feeding the horses and other chores our #3 son had gotten up, had breakfast and headed off to work, and in the process had used up most of the milk for his breakfast – the milk that I was planning on using for pancakes! Those teenage boys can consume a lot! Well, he had saved enough for almost the amount I needed. Hmmm…now what? Okay, improvise. Back to the fridge. Oooh, we have some half and half! Catastrophe diverted.

Now comes the challenge for me. How do I get the eggs and the pancakes to be ready at the same time to feed my army of eaters? The eggs are on stove and the electric griddle is on the breakfast bar, about six feet from each other. I have decided this time to cook them slower at a lower temperature. Start the first batch, get out the butter, jam and syrup, turn on the oven to “keep warm,” finish the first six pancakes and start on the eggs. Next, wake up the kiddos, get them to set the table, say grace and start eating. I would have never thought that sleeping was a strenuous activity, but those kiddos polished off 30 pancakes and a plate of eggs. One would have thought they had worked a full day on the farm!

Fresh This Week Tips – May 17th, 2011

STRAWBERRIES

STORE: Leave strawberries unwashed and loosely wrap the container in a plastic bag or paper towel and store in the refrigerator for up to 3 days.

PREP: Wash the berries and trim the caps just before using.

USE: Strawberries are perfect in pies, just right in jams, and a sweet-tart touch in salads. But they’re at their best raw, served at room temperature, topped with freshly whipped cream.

GREEN LEAF LETTUCE

STORE: Refrigerate in a loosely closed plastic bag; do not seal tightly. If roots are attached, wrap them in a damp paper towel before placing the lettuce in the bag. Lettuce is delicate and should be eaten within 5 days (iceberg lasts up to 2 weeks); discard any leaves that are wilted or slimy. Do not separate the leaves from the head or wash until just before using.

PREP: To toss a picture-perfect salad, first tear (don’t cut) leaves from the core, then clean and dry them well. The best way to do this is with a salad spinner. Fill it with cold water, add greens to the basket, and swish. Lift out greens, dump the water, and repeat until the water is grit-free. Spin the greens until thoroughly dry (in batches, if necessary). Excess moisture dilutes the dressing. Oil can cause greens to wilt, so dress them just before serving with only enough dressing to nicely coat the leaves without pooling in the bottom of the bowl.

USE: Perhaps the most versatile vegetable in existence, lettuce is a great accompaniment to almost anything your heart desires. Most notably found in salads, check out this recipe for a strawberry green leaf salad that is sure to satisfy your taste buds.

FRESH STRAWBERRY SALAD

4 c. leaf lettuce

1 pt. strawberries

2 kiwifruit

DRESSING

1/4 c. honey

1/4 c. wine or tarragon vinegar

1/4 c. salad oil

1/2 tsp. dill weed

  • Wash, dry and tear lettuce. Wash, hull and quarter strawberries. Peel and slice kiwifruit. Toss gently in bowl. Combine dressing ingredients and shake until well mixed. Drizzle over salad.

RHUBARB

STORE: Keep unwashed stalks in a loose plastic bag, leaves attached, in the vegetable drawer. Rhubarb will last up to a week; use it before the stalks become soft.

PREP: Just before using, wash the stalks and remove the leaves (they contain oxalic acid, which is toxic if eaten in large quantities). If you’ve got a tough bunch, you can peel them with a paring knife or a vegetable peeler.

USE: Rhubarb is quite tart and is best cooked with sugar in sauces or compotes or used as a filling in pies, crisps, or cobblers. It is lovely paired with the sweetness of strawberries or raspberries.
