This tomato sauce is the beginning of a fantastic, Italian dinner. Local tomatoes are handpicked at the peak of ripeness and canned with organic onions, organic olive oil, organic carrot, organic garlic, sea salt, organic basil and organic oregano to make a delicious sauce for you. Just simmer and add your favorite variety of pasta.
Paul and Judy Fuller whistle while they work. With the help of their sons, the Fullers and their crew happily create a variety of small-batch, organic kitchen staples made from local, Oregon sources – pickles and relish, pickled beets and jalapeños, fruit spreads, salsas, enchilada and tomato sauces, and apple sauces. They also preserve delicious, Oregon-caught albacore tuna. It’s their passion to support local farmers and fisherman, and they have no intention of changing direction in order to chase success.
“We believe in a static growth,” Fuller said. “To go national takes fighting the big boys. We like the idea of being a high-quality, regional player. You lose the flavor if you start trucking stuff all over the country. It’s not sustainable to grow too much.”
Sweet Creek currently offers more than 20 different products through Azure, with the newest additions being three different varieties of Organic Tomato Sauce.
When it’s time to chop all those Northwest-grown tomatoes and basil, Paul and Judy Fuller crank up the music and get to work.
“Summer and fall is such a busy and fun time in the kitchen,” Judy said. “We’re trying to be the third leg in a local food system, working with the bounty here and getting it to the people in a different way so they can enjoy these delicious tomatoes all year around.”
