Our Rumiano Organic Mild Cheddar is a smooth and creamy cheese that has a gentle flavor. It has a white color and a subtle hint of tanginess, with a slight nutty taste. Our mild cheddar is only aged three months, which results in its mild flavor and softer texture. It is versatile and can be used in a huge variety of dishes, from sandwiches to macaroni and cheese.
We use a proprietary Microbial Coagulant. This is a Microbial Coagulant from the fungi Rhizomucor miehei (aka Mucor miehei) and is a species of fungus commercially used to produce enzymes that can be used to curd the milk to produce cheese. We do not use Chymosin (or Chymax) as it is NOT allowed in Organic and is on the National Organic Program prohibited substance list as being GMO. The milk used to create Rumiano Cheese, Butter, Ghee and Whey Protein Concentrate-80% is sourced from 19 certified, organic family dairies within an 85-mile radius of our production facility in Crescent City, CA. No vaccines are allowed to be used with any cows that are being milked. If a cow receives a vaccine, that cow is taken out of the milking line.
