Quinoa Stuffed Delicata Squash

Ingredients
  

For Roasted Delicata
  • 2 Delicata squash Halved and seeded
  • 1 Tbsp Olive oil
  • 1 tsp Salt and pepper
For Quinoa Stuffing
  • 2 Cups Cooked Quinoa
  • 1/2 Onion Peeled and chopped
  • 1/2 Cup Red pepper Finely diced
  • 3 Tbsp Lemon Juice
  • 1 tsp Salt
  • 1 Tbsp Olive oil
  • 1/4 Cup Parsley Finely chopped
  • 2 Cloves Garlic Peeled and chopped

Method
 

Quinoa Stuffing
  1. In large bowl, mix together all of your prepped ingredients. Set aside and chill if not using right away.
Roasted Delicata
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Lightly cover squash with oil, sprinkle salt and pepper on to the flesh.
  3. Place halved, oiled, and seasoned squash on baking sheet.
  4. Stuff squash with the quinoa mixture
  5. Bake at 400 degrees Fahrenheit for about 40 minutes. Once they’re tender and golden brown around the edges, they’re done.
