Description
Our Rumiano Organic Sharp Cheddar is aged nine months in order to fully develop its bold and intense flavor profile with a distinctive tangy and slightly nutty taste. The texture is firm and crumbly with a slightly granular mouthfeel. This cheese is white in color and the aroma is robust and pungent.
We use a proprietary Microbial Coagulant. This is a Microbial Coagulant from the fungi Rhizomucor miehei (aka Mucor miehei) and is a species of fungus commercially used to produce enzymes that can be used to curd the milk to produce cheese. We do not use Chymosin (or Chymax) as it is NOT allowed in Organic and is on the National Organic Program prohibited substance list as being GMO. The milk used to create Rumiano Cheese, Butter, Ghee and Whey Protein Concentrate-80% is sourced from 19 certified, organic family dairies within an 85-mile radius of our production facility in Crescent City, CA. No vaccines are allowed to be used with any cows that are being milked. If a cow receives a vaccine, that cow is taken out of the milking line.
