Rumiano’s sharp organic cheddar has a full flavor with a balanced sharpness that’s perfect for cheese lovers! Cheddar Cheese is a hard pale yellow to orange smooth textured cheese originally made in the English village of Cheddar, in Somerset. Cheddar flavors vary depending on length of aging and its origin. Sharp cheddar is aged for one to two years. This cheese is Certified Organic, Kosher, American Humane Certified and Non-GMO Verified.

Our little corner of the world enjoys the perfect climate for pasture raised cows, where they’re free to roam in fresh ocean air year-round on the lush green grasses of small family farms. The difference in our award-winning cheese made from pure organic milk is easy to taste. Nutrient-rich and full of flavor, our products are part of a positive cycle for people, land and animals.
We use a proprietary Microbial Coagulant. This is a Microbial Coagulant from the fungi Rhizomucor miehei (aka Mucor miehei) and is a species of fungus commercially used to produce enzymes that can be used to curd the milk to produce cheese. We do not use Chymosin (or Chymax) as it is NOT allowed in Organic and is on the National Organic Program prohibited substance list as being GMO. The milk used to create Rumiano Cheese, Butter, Ghee and Whey Protein Concentrate-80% is sourced from 19 certified, organic family dairies within an 85-mile radius of our production facility in Crescent City, CA. No vaccines are allowed to be used with any cows that are being milked. If a cow receives a vaccine, that cow is taken out of the milking line.
